Fresh chillies Well, we have now picked all the fruit off our chilli plants, so that is the end of the fresh chilli season for this year. The traditional preparation of these whole dried chillies are to soak them in water then ground into a paste before adding to a dish.

A powder of Kashmiri red chillies can be added to marinades, and while frying onions and tomatoes for preparing curries.
