Although annoyed, I must say this seller is very professional and refunded my purchase promptly, in a most courteous manner--somewhat remarkably for such a small dollar amount. I probably haven’t made this for about 20 years, which is crazy as it was one of my vegetarian dinner party favourites.

This cookbook is not only for those who don't eat meat or fish but also for those who find themselves wanting to cook for vegetarians. The pastry is quite involved, I often just make some shortcrust pastry with a teaspoon of mustard in.Delia is clearly not very veggie savvy - not only are there a lot of cheese and egg recipes (although there's a list at the back of vegan recipes) but a lot of the cheeses she suggests using are not vegetarian! This is a used book - there is no escaping the fact it has been read by someone else and it will show signs of wear and previous use. The majority of pages are undamaged with some creasing or tearing, and pencil underlining of text, but this is minimal. Cheese will do that job perfectly, of course, as well as adding fat, so if you use it, fold in grated hard cheese of your choice to taste (about 50g should do, but it will vary depending on strength; you’ll need less mature cheddar than red leicester, for example). Many of the seasonings used in the recipes don’t work so well with a chestnut base – Smith’s mustard powder and Young’s togarashi, to name just two – but fresh sage, as used by Mob Kitchen, is an excellent pairing, as well as a pleasing nod to classic festive stuffing.

My kids tried it and abandoned the meat one and now prefer the vegetarian version even though two of them are meat eaters .Turn out onto a floured surface and knead for about 6 minutes by which time you should have a smooth elastic dough.
