All physiologists admit that the swimbladder is homologous, or “ideally similar” in position and structure with the lungs of the higher vertebrate animals: hence there is no reason to doubt that the swim bladder has actually been converted into lungs, or an organ used exclusively for respiration. According to this view it may be inferred that all vertebrate animals with true lungs are descended by ordinary generation from an ancient and unknown prototype, which was furnished with a floating apparatus or swim bladder. In Asian culture, it is called “魚鰾”, “鱼胶”or “花胶”, it is considered to be one of the top four delicacies of the sea that is Abalone, Sea Cucumber, Shark Fin and Fish Maw. Therefore, it is popularly served during special occasion such as Chinese New Year, birthdays, and weddings. Fish maw has various uses, including the manufacture of surgical sutures, but it is also a delicacy in China, where it is served in soups or stews in addition to being used as a source of collagen. It is also used to make water-resistant glue and in the production of isinglass, a refining agent involved in the manufacture of beer and wine.
