Fortaleza is top tier tequila that can be enjoyed straight or mixed. It’s a rare find so if you see it , buy it and you won’t regret it For those who – like me – are unfamiliar with some of tequila’s particulars, allow me to briefly run down a bit of what makes it unique. Tequila is made by distilling the fermentation of Weber Blue agave plants, a succulent in the lily family. It must contain at least 51% blue agave distillate and by law must come from one of five Mexican states, the most well-known being Tequila, Jalisco in central Mexico.

While the majority of tequila is produced in the state of Jalisco, some municipalities in other states are also allowed to make this spirit. One of these other states is Guanajuato, and this is where Corralejo is based. Its Blanco is a creamy, citrusy tequila with flavours of lime zest, agave syrup, zippy white pepper, pencil shavings and vanilla, which accentuate the lime and agave flavours in a Margarita. Like wine and other unique spirits, tequila is produced according to regulations that govern its appellation of origin. Tequila may only be made in the state of Jalisco, which includes the town of Tequila, and parts of the surrounding states of Guanajuato, Michoacán, Nayarit and Tamaulipas. It must be made from blue agave and in accordance with additional rules for ingredients and aging. Spirits made using other agave species or elsewhere in Mexico are classified as mezcal. My journey has seen me as an owner of sophisticated bars and renowned liquor shops, and even as a Mezcal distiller, honing the craft from scratch. Made by legendary distiller Carlos Camarena, Ocho made waves when it was launched because it was the first-ever single-field Tequila to be produced. Blanco tequila is different from other expressions of tequila in that it is clear in color and only sees 0-2 months of aging, if any at all. Some professionals say that blanco tequilas are the purest expressions on the market, as they do not see any oak aging. Don Cenobio Sauza is know by many as the Father of Tequila. He was one of the earliest and longest lasting tequila distillers, and was responsible for much of the industry an economy in Jalisco and as a result of tequila's rising popularity. A tequila labeled simply “gold” or “joven” is unaged, possibly with caramel coloring or other sweeteners added. The fermentation length, temperature and yeast affect the development of flavor compounds or congeners that produce a specific tequila style. Some producers add piña fibers called bagasse to the fermentation vessel to enhance the complexity of the spirit. Regulations demand that tequila be double-distilled in pot stills, or produced with a continuous still that has at least two columns. Here, I’m not just sharing opinions; I’m weaving tales from the rich tapestry of my experiences over these three decades.In addition to making its mark on the aficionado community worldwide, Fortaleza has also built close ties to the restaurant and bar industry community by hosting quarterly trips and tours to the Tequila making regions of Mexico. The heart of the agave plant is first slow roasted and shredded, then combined with cane sugar and yeast before being fermented for a number of days. Once deemed ready, the fermentation is run a minimum of two times through a still. “Blanco” is a designation typically reserved for non-aged blue agave plant distillate, though some blancos are stored for up to two months in either stainless steel tanks or neutral oak barrels. Fermentation happens in wood, open-air tanks. Destileria La Fortaleza uses a special yeast which has been in the family for generations. Nothing else is added to the process, not sugar nor yeast-accelerating chemicals. Fermentation at this rate takes about four days. Then it is distilled twice in the original 100+ year old copper pot stills. Fortaleza distills close to proof, to preserve as much of the agave flavor as possible. The flavour profile of Don Julio Blanco is hailed as a classic, balancing creamy and peppery characters with a vegetal note, some lemon, pastry and a clear minerality. It's one of the most widely-known and well-respected brands amongst those in the know, even if it still doesn't have mainstream recognition. This blue agave juice may make a 100 percent agave spirit, or the producer may add up to 49 percent non-agave sugars, such as sugar cane or corn sugars, to make a “mixto” or “regular” tequila.

Tequila may be bottled without maturation or aged in oak barrels. The length of aging determines how it is labeled: Colorless blanco or silver tequila is aged fewer than two months in oak; reposado between two and 12 months; añejo for more than one year. Extra añejo is a category added in 2006 that includes tequila aged at least three years in oak vats under 600 liters. Generally, the longer tequila ages in oak, the smoother and more full-bodied it becomes. There are many factors that create a great blanco tequila," explains Jay Turner, senior marketing director of Trinchero Family Estates.
