Description

The recipes pay homage to her royal Mughlai ancestry and follow the route of the Darjeeling Express train from the busy streets of Bengal, through Calcutta, where she grew up, and along the foothills of the Himalayas to Hyderabad. Since then, Darjeeling Express has become Londoners' Soho go-to for great cooking from her team of female chefs. Asma was voted ‘Female Entrepreneur of the Year’ at the Asian Restaurant Awards 2018, as well as ‘Entrepreneur of the Year’ at the Asian Women of the Year Awards. I was worried that it would be tough but it wasn't, and had a very good flavour and nice crisp edges.

But to keep ourselves on our toes, we have a rule that author gender is alternated, girl-boy-girl-boy, and the continents always rotated (with occasional glitches). In fact, the inspiration often works the other way around: we're exposed to slices of other cultures back home that move us to go to the source. Many of the recipes are vegetarian, there are sweet treats and drinks, too, and all feature alongside lesser-known recipes and stories unique to Asma's family. The recipes are homage to Asma's royal Mughlai ancestry and the busy streets of Calcutta and are split between. With a minimum of peeling and chopping, and the judicious addition of spices, familiar vegetables become exciting food in Khan's book. I don't know if I did something wrong with this, but I followed the recipe and the lentils were not cooked in even 2 hours rather than 40 minutes. In 2015, she opened a pop-up in Soho to much acclaim, and Darjeeling Express the restaurant opened its doors in June 2017, perfectly positioned in Kingly Court in central London.

I haven't tried any of the recipes yet, but I am excited to try the chana, as it is my favorite and I am constantly seeking the perfect incarnation.Asma Khan, proprietor of Darjeeling Express restaurant in London's Kingly Court in Soho, arrived in the UK from Kolkata in 1991. In the end, I scooped out about five cups of water and cooked the dal for a while longer to cook off the excess water and trust it turned out about how it should have. Asma is the first British chef to appear on Netflix’s award-winning series Chef’s Table (Season 6, February 2019). A book for reading leisurely in a comfy chair, or proudly standing on the counter top of your kitchen whilst your cooking one of the recipes. One of the things I love about visiting Asma is her love of telling stories, in fact, she’s a real talker and sometimes I wonder how she has time to also supervise the cooking!Everything looks simple yet complex, lot's of flavor building with spices and techniques that are explained beautifully. Ein empfehlenswertes Kochbuch, das nicht nur mit indischen Kochtraditionen vertraut macht, sondern auch dem kulturellen Erbe der Autorin huldigt und uns die Vielfalt dieses Landes näherbringt. Divided into chapters devoted to dinners-a-deux, family meals, cooking for friends, and celebratory feasting, the book draws both from Asma’s diverse – and noble – family heritage (Rajput, Bengali and Bihari, with close links to Hyderabad) and her time in cosmopolitan (then) Calcutta; a city of notorious epicures, where good food is universally adored and embraced irrespective of its origin. In this book, Asma reveals the secret to her success, telling her immigrant's story and how food brought her home.
